Mexican eggs:
As we all may know I come from a Mexican family, My mother would always cook Mexican eggs when I was younger as this was my favorite kind of eggs to eat. These eggs remind me of her and my family all the time and are super easy to make, many people do try making these eggs and mess them up due to overthinking or rushing and in this writing I will explain how to make them.
Ingredients:
Eggs(as many as you want I will be explaining off of 2 eggs but this can easily be adjusted as sometimes I add more of one thing than the other).
Tomato, serrano peppers(Not to be confused with the much larger jalapeño), Onion, oil and chicken flavor bouillon cubes (1 is only necessary or half)
Step 1: Cut up your tomato into small little cubes , your serrano peppers in small circles I prefer so just cut from the bottom to up it forms the circle due to the shape of course, and cut your onion as well I prefer my onion cut in long lengths, not cubes.
Step 2:Turn on the pan you will be used to heat up on medium heat, throw some oil in there, not to much a small drizzle is fine or about 2 tablespoons it really doesn’t matter as long as you have a nice spread on your pan so everything cooks nice.
Step 3:Very Important!! , we will now throw into this pan our tomato alone and let this shimmer in the pan until it seems to look as if it’s melting this is very important as we don’t want to bite into tomato cubes this gives off a weird taste that I don’t appreciate and makes our eggs watery it’s just gross. Once our tomato seems to look this way we can add our serrano peppers and onion, make sure to move it around with your spoon or any tool you use. When adding the pepper and onion you also want to add in half or a whole cube of chicken Flavoring bouillon and mix this around (add some more oil if necessary )
Step 4:Once the flavoring is mixed into our tomato onion and pepper we can now ad our eggs, make sure to turn the heat down if necessary, adding your eggs you want to scramble them and mix it in with the other ingredients until they are done, they should look like regular eggs make sure you don’t undercook or overcook them.
And done! you have your eggs , you can eat them with some Italian bread or tortillas (remember to heat up your tortillas and for it to be Mexican tortillas, not burrito ones)(fun fact: My mom didn’t know what a burrito was until she came to America)
